Seared Sockeye Salmon Salad


Sorry, I know I just used an annoying amount of alliteration.  Ok, this meal is light, healthy, simple, cheap, and delicious.  The lettuce is a mix of lettuce from my garden and bag lettuce from the store.  The salmon was seared in oil with a dash of ginger, salt, and paprika, then coated with honey dijon.  The dressing was made by whisking honey, olive oil, dijon mustard, soy sauce, a few drops of sesame seed oil, a splash of rice vinegar, and a dash of salt.  We cut a 5 grain baguette on the side for a soft crouton.  Pair with an inexpensive bottle of Barefoot Pinot Grigio.
